Hi, I've been using my Ramsa DA7 for about 10 years working with Logic Pro and many plugins. My setup has Motu Interfaces conected to the Ramsa via ADAT and I Use the Ramsa converters. But now I'm planning to use more analog gear (warm audio, universal audio, ssl, purple audio, etc, etc) and I'm wondering if i can configure the Ramsa inserts with the 17-32 digital channels so I can send it's signal to my outbard. Let's say I have in Logic a drum bus that goes to Ramsa's 17/18 channels via ADAT, is there any chance I can use the channels 1/2 inserts to send the signal to my analog effects chain...?

No. The inserts are truly inserts in the analog section of the desk before the converters. In theory, you could send you digital signal out an analog output, to your device and return it via an insert in, but not sure what that would buy you other than bypassing the preamp on the way back in.
