I see that i was being somewhat optimistic in my hopes for multiple mics.
Usually i find these people feel best playing while they sing, so i am stuck recording finals of both the guitar and voice at once.
It really is a challenge, I'm learning lots.
Like how to comprimise. \:D

OK, Going to be hard to explain in text. For the guitar, orientate one of the mics so it's figure 8 pattern is parrallel to the guitar ie one side pointing down to the sound hole the other side pointing up the neck. Move this mic towards/away from the guitar, further up the neck or more down towards the sound hole until you get the sound you are after. Place the other mic so it's figure 8 pattern is pointing towards the mouth of the singer and the other side is pointing away from the singer out to nothing. Once again position this mic until you get the sound you are after. So the figure 8 patterns have sort of got this + arrangement (with the mics physical position not that close together though. Move the mics around on their respective planes until you get a sound you're happy with). Give it a try.
